I believe in cooking that honors the land it comes from. Central Java’s volcanic soil, tropical climate, and centuries of spice trade heritage yield ingredients of uncommon depth. My role is simply to listen, and let the flavors speak.

About the Chef
Born and raised in Tegal, Central Java, Chef Suryo discovered his calling in the smoke-filled kitchens of his grandmother’s warung. What began as childhood curiosity became a lifelong devotion to the art of Indonesian fire cooking.
After training at Le Cordon Bleu in Paris and honing his craft across kitchens in Singapore, Bangkok, and Tokyo, Suryo returned home with a singular mission: to elevate Central Javanese cuisine to the world stage without losing its soul.
With over 15 years of professional experience and a deep reverence for local ingredients, he creates dishes that bridge heritage and innovation — always rooted in fire, always guided by spice.
